
The SOL Breads story began in 1997 in the basement of a local West End restaurant, born of a desire to create a range of naturally leavened, organically based healthy and nutritious breads. The original bakers worked long hours, toiling over the leavens, hand mixing and shaping the loaves, loading the ovens, and driving the finished product to the few dedicated customers. Within a very short space of time, it was obvious that Sol had grown beyond the basement, and a new site was found in cosmopolitan West End. With a dedicated distributor in Byron Bay, and a fast growing demand in the local community and beyond, the ovens at Sol were always busy.
The first SOL Breads café opened at our West End site in 1999 as a response to growing demand. From the beginning, we have provided a range of fresh, healthy and wholesome food all produced on the premises to our own high standards. The food is neither fancy nor expensive, but is the type of food that we ourselves like to eat on a daily basis. Over the past few years, more and more people have requested dietary specific offerings and our menu now includes a range of wheat, gluten and dairy free products . Tarts, pizzas, slices, cakes, muffins, pastries, sandwiches, and seasonal salads and soups as well as organic coffee and teas are now available daily.
SOL Breads now has 3 cafes, each with its own quirks and specialties. The staff at each site, decide daily (based on seasonal availability) what to prepare to best supply their customers requirements.
West End at the moment is having a soup frenzy with all sorts of mouth watering combinations coming out of the kitchen. Our young and enthusiastic manager, Kira, has a wonderful flair for food, having spent some time in the kitchen of one of Melbourne’s best chefs. She has already added some delicious new breakfast and lunch combinations to the menu.
At Paddington, the team led by Helen, is known for their daily muffin creations. With a spelt flour base, on any day they may whip up berry, chocolate and raspberry, muesli, or banana. Helen is also currently working on some new brekkie combos. The Paddington store is housed in an old, character filled building which provides a lovely atmosphere for customers to linger over their coffee.
Our Newstead store provides a haven for locals and workers alike from the busy outside world. The hum of the working bakery provides the pervading sourdough aroma to the shop, a distinct and natural smell of baking bread. The menu at Newstead includes daily sandwich and salad specials, as well as a full range of the SOL cakes and savouries.
