Gluten Free Kids Choice: Mini Gluten Free Ham & Cheese Quiches

ingredients 12 slices fresh gluten-free bread (crusts removed) Olive oil spray 4 eggs 1 cup milk 150g ham, finely chopped 1 cup shredded tasty cheese
Method
1. Preheat oven to 170 degrees C. Lightly spray a 12 cup muffin tin with olive oil spray.
2. Use a rolling pin to roll out each slice of bread until thin. Lightly spray both sides of the bread with the olive oil spray, then line each muffin cup with a slice of bread. Bake for 10 minutes then remove from the oven.
3. Divide the ham and the cheese between each of the bread cases. Whisk the eggs and milk together and carefully pour into the bread cases, dividing evenly among them.
4. Bake for 15-20 minutes or until set.
5. Serve with a side salad or some steamed vegetables.
